Ranch-to-Table Recipe: California avocados take the place of taco shells in this yummy meal!

Ingredients:
- 1 pound ground beef, turkey, or your favorite meat substitute
- 1 tablespoon chili powder
- ½ teaspoon salt
- ¾ teaspoon cumin
- ½ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 4 ounces tomato sauce
- 3 California avocados halved
- 1 cup shredded cheddar cheese
- ¼ cup cherry tomatoes sliced
- ¼ cup lettuce shredded
Additional toppings:
- Guacamole
- Cilantro
- Sour cream
- Olives
Directions:
If using beef, add ground beef to a medium-size saucepan. Cook over medium heat until browned.
Drain the grease and add the seasonings and the tomato sauce. Stir to combine. Cook for about 3-4 minutes.
Adjust for other protein options.
Remove the pit from the halved avocados and scoop out a spoonful of avocado and set aside for guacamole (see our easy recipe for guacamole!), leaving a good layer of avocado in the shell.
Fill the avocado half with taco meat/protein. Top with cheese, tomatoes, lettuce, cilantro, sour cream, and guacamole. Delish!
