Ranch-to-Table Recipe: This Avocado, Strawberry & Goat Cheese sandwich is sweet & tart and creamy & delicious! Switch out the cheese to make it vegan; use your favorite GF bread and it’s gluten-free. Yum!

Ingredients:

  • 2 slices of bread
  • 1 California avocado
  • 4 medium strawberries, thinly sliced
  • 2-4 Tablespoons goat’s milk mozzarella, crumbled
  • 1 teaspoon lemon juice
  • 1/8 teaspoon salt
  • Black pepper & sea salt

Directions – cold version:

  • Toast the bread and place on a cooling rack to stay crisp but not hot (or soggy)
  • Mash the avocado with a fork and then mash in the lemon juice + salt
  • Add as much avocado to the toast as desired and add one layer of thinly sliced strawberries
  • Top with salt, pepper, and about 1T crumbled goat cheese per slice
  • Add more strawberries as you desire

Warm version – Sautéed Strawberry Avocado & Goat Cheese Sandwich

Ingredients:

  • 2 slices of bread
  • 1 California avocado
  • 4 medium strawberries, thinly sliced
  • Goat’s milk mozzarella, thinly sliced
  • 1 teaspoon unrefined coconut oil
  • 1 Tablespoon balsamic vinegar
  • 1 teaspoon lemon juice
  • 1/8 teaspoon salt
  • Black pepper & sea salt

Directions:

  • Toast the bread and place on a cooling rack to stay crisp but not hot (or soggy)
  • Turn your oven on to broil
  • Mash the avocado with a fork and then mash in the lemon juice and salt
  • Add oil to a small pan over medium heat
  • Once hot, add the strawberries and balsamic, cooking for 3 – 5 minutes until softened but not falling apart. Stir and flip a few times
  • Add as much avocado to the toast as desired
  • Add a layer of cooked strawberries
  • Top with a thin layer of goat cheese
  • Broil until melted, about 1 -3 minutes
    • Recipe Notes: If you’re using crumbly goat cheese, keep an eye on it so it doesn’t burn.
