Ranch-to-Table Recipe: This Avocado, Strawberry & Goat Cheese sandwich is sweet & tart and creamy & delicious! Switch out the cheese to make it vegan; use your favorite GF bread and it’s gluten-free. Yum!

Ingredients:
- 2 slices of bread
- 1 California avocado
- 4 medium strawberries, thinly sliced
- 2-4 Tablespoons goat’s milk mozzarella, crumbled
- 1 teaspoon lemon juice
- 1/8 teaspoon salt
- Black pepper & sea salt
Directions – cold version:
- Toast the bread and place on a cooling rack to stay crisp but not hot (or soggy)
- Mash the avocado with a fork and then mash in the lemon juice + salt
- Add as much avocado to the toast as desired and add one layer of thinly sliced strawberries
- Top with salt, pepper, and about 1T crumbled goat cheese per slice
- Add more strawberries as you desire
Warm version – Sautéed Strawberry Avocado & Goat Cheese Sandwich
Ingredients:
- 2 slices of bread
- 1 California avocado
- 4 medium strawberries, thinly sliced
- Goat’s milk mozzarella, thinly sliced
- 1 teaspoon unrefined coconut oil
- 1 Tablespoon balsamic vinegar
- 1 teaspoon lemon juice
- 1/8 teaspoon salt
- Black pepper & sea salt
Directions:
- Toast the bread and place on a cooling rack to stay crisp but not hot (or soggy)
- Turn your oven on to broil
- Mash the avocado with a fork and then mash in the lemon juice and salt
- Add oil to a small pan over medium heat
- Once hot, add the strawberries and balsamic, cooking for 3 – 5 minutes until softened but not falling apart. Stir and flip a few times
- Add as much avocado to the toast as desired
- Add a layer of cooked strawberries
- Top with a thin layer of goat cheese
- Broil until melted, about 1 -3 minutes
- Recipe Notes: If you’re using crumbly goat cheese, keep an eye on it so it doesn’t burn.
